What's the origin of You Had One Job?

The line first occurred in the 2001 Ocean’s Eleven, where it is said by Basher Tarr (played by Don Cheadle) who is reprimanding his team for missing an essential step, that leads to the failure of the heist.

An early online case of “you had one job” comes from Reddit user nomdeweb who used the catchphrase with a screenshot of Jurassic Park’s credits, depicting the name of Phil Tippett who was “dinosaur supervisor”.
